Baked donuts are super easy to make, not to mention way healthier than their fried counterparts.
I’m sure you’ve had bananas that were past their prime before, and you probably will again. Which is why these donuts are perfect for people like us.
Prep 15 mins | Cook 12-15 mins | Total 30 mins | Yields 12 tasty donuts
Ingredients
Donuts
1 egg
¼ cup vegetable oil
¼ cup sour cream (greek yogurt works too!)
½ cup light brown sugar, packed
¼ granulated sugar
¼ teaspoon ground cinnamon
2 teaspoons vanilla extract
1 cup mashed ripe (forgotten) bananas
1 ¼ cups flour
½ teaspoon baking powder
½ teaspoon baking soda
pinch of salt – optional
Glaze
½ stick browned butter (1/4 cup)
1/3 cup light brown sugar, packed
3 tablespoons cream (half and half works too)
1 ½ cups confectioners’ sugar, sifted
½ teaspoon vanilla extract
¼ cup cocoa powder
pinch of salt – optional
Preheat the oven to 350.
Grease or flour your 6-count donut pans.
Combine the egg, sugars, oil, vanilla, and sour cream. Next, add the bananas.
Next, add the dry ingredients (flour, baking powder/soda, salt) by lightly stirring, be sure to not over combine.
Fill the donut pans about 2/3 or ¾ full, and bake for 10-14 minutes, or until a toothpick comes out clean.
For the glaze, brown your butter over medium heat until it’s amber/brown, should take anywhere from 3-5 minutes.
Add the cream, vanilla and salt, be sure to whisk fast. Then add the confectioners’ sugar and cocoa powder.
Dip each donut into the glaze, and let cool before you eat. You can eat them all right then and there or if you have self-control you can store them in an airtight container for up to 4 days.
Enjoy!
