Yes, they smell, and can be scary at times. But there are plenty of great uses for them that taste delicious.
First off, the cheeks are incredible, and I know if might seem weird but don’t knock the eyes unless you’ve tried them.
One of the easiest things you can make with fish heads is soup/stalk. All you need are fish heads, the holy trinity (carrots, onions, celery), preferred spices, and whatever else you want to throw in. it’s straight forward, all you have to do is put all of the above in a pot with cold water, boil it for a few hours, discard the solids and you’re done!
Another great dish that takes little to no effort is just to broil the fish heads with ginger and scallions and to eat the meat (o:3 – you can use the bones for stalk if you’re feeling ambitious.
I’m telling you, they’re not as scary as they let on.
